Healthy Breakfast: Chia Pudding With Berries

I recently decided to put the kibosh on eating wheat (I like to pretend I have an allergy to it like the 99.9% of the beautiful, skinny people who are all suddenly celiacs), and was really missing my morning bowl of cereal. I recently discovered YumUniverse, the genius brainchild of Heather Crosby that promotes a healthy lifestyle through a plant-based diet. I'm not going to lie - some of the recipes made my non-vegan eyes roll (black bean brownies...really?! need to taste it to believe it.), and others got my mouth watering. I think I've read through all those recipes several times now. It's just so interesting to me how Heather takes a fairly basic ingredient, like kale or beets, and can make a full 3-course meal with it. 

Anyways, I digress - back to me missing my cereal. Lucky Charms and Honeycomb to be exact. Processed, sugary crap. That's how I started my day. Gross, I know. When I spotted a recipe for Honey Chia Pudding with Pomegranate Seeds and Toasted Pepitas, I decided that was going to be the recipe to ease me into a plant-based diet. A long time drinker of almond milk, I used 2 cups of  plain almond milk that I had in the fridge instead of making my own cashew milk, mixed the chia seeds in, stirred in some Mexican vanilla, a little agave and BAM! Breakfast is served.  

This has been the only recipe I've made so far on the site, but dang....I actually wake up excited to eat my beloved gelatinous pudding. I'm being serious!!! If they are all this healthy and tasty, sign me up for the program. Anyone want to do the 30-day challenge with me?? :)

  2. such an important way to start your day.I am really thinking a plant based diet is the way to go. green drink in the am sets the day right.

  3. That looks like a yummy recipe! My husband and I have been on paleo diet for over a year now and it feels great! We do treat ourselves to pizza and such now and then but mostly stick to plants, fruits, nuts and meat!
